Great Balls of Fire


I am now an old lady. I don't really feel like an old lady and I don't think I act or look like an old lady. But apparently the numbers do not lie...I keep telling Eric he has to be nice to me because it's my birthday and he keeps telling me that it WAS my birthday and now it's over...he should know by now that Nielsons like to spread the celebration out over several days/weeks.


The festivities began on Sunday (1/29) when we had family dinner at my parents. Yeah for family dinner now that everyone is back in town. We had fish and salad and Mary made a delicious Gluten Free Coconut Cake. Fantabulous.

Monday (1/30) we skyped with birthday boy Mark and opened presents via the computer.

Tuesday (1/31) GOAT RODEO SESSIONS (wow...)

Wednesday (2/1...the actual day) Emily, Nancy, and I met Eric and Mary at Papagyo for lunch and then I had to be a grown up and go to work. Thanks to everyone for the shout outs and singing messages. I feel very loved.




Thursday (2/2) Work again, but today, for fun, I made my very first chocolate gluten free cake with fudge frosting. I've steered clear of baking cake I can actually eat because the real deal is always better right? And I didn't want to rub salt in the no wheat wound. But now it is time to accept the fact that I can't/shouldn't eat wheat so I might as well adapt. This recipe is definitely a keeper and, even though Eric thinks the way I half a recipe is to double it, when halved this one made a darling 4 inch cake just perfect for two (or four...) people. After dinner we skyped with Michelle and her babies and then Erin. Chloe and Conner sang. Erin did not.

Friday (2/3) My day off to do whatever I want and so I'm catching up on blogs, emails, and chores--but only the things I want to do. Tomorrow Eric and I will go out to celebrate, capping off a fabulous week.
